Since leaving home, I’ve occasionally toyed with the idea of investing in a slow cooker, but held off on the misguided belief they’re only really good for cooking meat.
I know that leaving a meat dish like a beef casserole simmering in a slow cooker all day can leave the meat tender, full of flavour and ready for you after a long day at work; however as a pescetarian I thought I wouldn’t really get much use out of one.
That was until I discovered Ricardo Cuisine’s website, which has a wide selection of slow cooker recipes including vegetarian dishes and even desserts.
Slow cooked cheesecake? Yes please! Other great ideas include soups and rice pudding, giving the slow cooker idea a whole new perspective.
