I have a confession…although I’m a food and health blogger, my own cooking skills aren’t always up to scratch. As I’m generally cooking for one, on a budget and feeling hungry after work, I’ve found myself in a bit of a rut. While what I’m eating is healthy it is often pretty basic with salmon and vegetables, stir fries and omelettes forming staple meals for me week after week.
With that in mind I’m making it my challenge to try at least one new meal a week. Fitting in with my budget and time constraints they will also be low cost and easy to prepare – the perfect weekday dinners! I’ll be sharing them on munch so hopefully I can also provide some of you with some cooking inspiration too!
One of my goals with munch is to dispel the myth that eating healthily is expensive and requires niche products – most of the foods I buy are from regular supermarkets, with just a few specialist foods which are generally available from health food stores including Holland & Barrett and Whole Foods.
So for week one I’m going to be sharing a recipe for Spinach and Feta Gozleme. I became obsessed with these in Turkey so had to try and recreate them at home!
