10 easy and healthy lunch alternatives to take to the office

Eating healthily in the office doesn’t just have to mean bland and boring salads! Guest blogger Charlotte Rivington has compiled a list of 10 tasty and healthy lunches that will make your sandwich-buying friends jealous. Check them out below…

1. Turkey Avocado Wrap

Spread some boursin cheese over a wrap and fill with plum tomatoes, lettuce, turkey and avocado. Add a sprinkling of pine nuts for extra crunch. A delicious and quick lunch filled with protein, anti-oxidants and vitamins.

2. Tuna and Asparagus Salad

Toss together some cooked asparagus, tuna, chopped onions and peppers. Dress with olive oil, red wine vinegar and tarragon. This is a dish full of nutrients including omega-3 and various vitamins minerals. For extra protein, slices of boiled egg make a delicious addition.

Top chopped strawberries, apples and melon with fat-free yoghurt, fruit and fibre cereal and mixed seeds. Add a handful of almonds which are known for their many health benefits. Finally drizzle over honey and enjoy a healthy treat that’s good for digestion.

4. Grilled Halloumi Stuffed Pitta

Spread a generous amount of hummus inside a toasted pitta. Stuff the pitta with grilled halloumi cheese, roasted red peppers and onions for a delicious, Lebanese inspired lunchtime snack.

5. Grilled Chicken and Broccoli Pasta Salad

Add together some pasta, grilled chicken and broccoli sautéed in chilli and garlic. Toss in some sliced cherry tomatoes and drizzle some pesto over the top for a simple dish full of protein and vitamins.

6. Ham and Watercress Bagel

The humble ham bagel is a staple lunchtime recipe but use whole-wheat bagels for a healthier option in this recipe. Spread cream cheese on the bagel and top with ham, lettuce, cucumber and watercress.

Stir-fry aubergines, courgettes, onions, broccoli, peppers and mushrooms together with chicken or beef. Toss in soya sauce and add a generous drizzle of peri-peri sauce for an extra kick. Serve with noodles for a tasty dish that can be eaten hot or cold.

8. Salmon and Couscous Salad

Super healthy and tasty, this is a great lunchtime treat. Add some broccoli, pomegranate seeds and pumpkin seeds to couscous. Steam cook or grill a salmon fillet and place this on top of the bed of couscous. Drizzle with lemon juice for some added flavour.

9. Mediterranean Roast Vegetable Baguette

Bored of sandwiches? Try this for a satisfying and delicious lunch. Fill a baguette generously with peppers, red onions and courgettes brushed with garlic and herbs. To finish, top with feta cheese. For a more filling version, add some grilled chicken or turkey.

10. Chicken Lettuce Bowls

Fill bowl-shaped lettuce leaves with chicken, finely chopped onions, peppers and carrots and sesame seeds which have been cooked in soya sauce and a dash of hoisin sauce. Top with toasted walnuts for crunch. Vegetarians can substitute quorn or soya for the chicken.
