It may be a humble vegetable, but Kale has acquired quite the cult celebrity following with the likes of Miranda Kerr, Gwyneth Paltrow and Jennifer Aniston extolling its virtues. Beyonce likes it so much she even got a sweatshirt of it! So just why should we be eating this leafy green?
Kale pretty much covers the nutritional A-Z with endless health benefits; it contains higher iron levels than beef along with Vitamin C to support the immune system and ensure our bodies absorb the iron. High vitamin K and calcium levels boost bone health; while it’s vitamin A content will support both your vision and skin. Kale is also rich in antioxidants which protect from free radicals and support healthy ageing and the skin – so maybe that’s how Jennifer Aniston stays looking so young!
While its distinctive taste can take some getting used to, another thing that Kale has in its favour is its versatility. From smoothies to sautéed veg to kale chips, there’s no end of ways you can introduce kale into your diet.
